Qualitative profiling of mono- and sesquiterpenols in aglycon libraries from Vitis vinifera L. Gewürztraminer using multidimensional gas chromatography–mass spectrometry

Abstract In grape berries ( Vitis vinifera L.), sesquiterpenes are mainly accumulated as hydrocarbons in the epicuticular wax layer of grapes, whereas monoterpenes, which predominantly present alcohols, glycosylated and stored glycosides vacuoles berry cells. this study, extensive analysis hydrolysates by means comprehensive two-dimensional gas chromatography–time-of-flight–mass spectrometry demonstrated that sesquiterpene alcohols show very little structural diversity when compared to hydrocarbon fraction cuticle a rather low extent monoterpenols. Twenty-four enzymatically released terpenols were found aromatic white wine variety Gewürztraminer V. subsp. ) after previous solid-phase extraction headspace microextraction. The detection only three namely farnesol, nerolidol drimenol, shows most do not have related hydroxylated structure grapes. Nevertheless, presence acyclic aglycone farnesol may be importance for aroma, since these isomers can converted into numerous nonenzymatic acid-catalyzed reactions during production. Grape-derived glycosidically bound therefore, represent, addition free hydrocarbons, another pool compounds influence aroma profile wines.
